Soft Dinner Rolls or Buns


2 1/4 tsp active dry yeast
1 cup warm water (110 degrees)
1/4 cup dry potato flakes
1 tbsp white sugar
1 tsp salt
1 egg
1 tbsp olive oil
3/4 tsp onion powder
3/4 cup whole wheat flour (1 cup whole wheat and D didn't like it as much)
1 1/2 cups white flour


Directions

  1. In a large bowl, dissolve yeast in warm water. Add potato flakes, sugar, salt, egg, vegetable oil, onion powder, and 1cup of the flour. Beat until smooth. Stir in remaining flour. Continue stirring until smooth, scraping batter from sides of bowl. Dough will be very sticky. 
  2. Cover and let dough rise in warm place until doubled, about 20 to 30 minutes.
  3. Preheat oven to 400 degrees F. Lightly grease 12 muffin cups or a glass pan.
  4. Punch down dough. Spoon dough into 12 greased muffin cups, filling each half full or divide into 12 and place in glass pan. Let rise until batter reaches tops of cups if in muffin tin, or about 20 minutes.
  5. Bake in a preheated 400 degree F for 15 minutes.
  6. Makes 12 rolls/buns (160 calories each)
