Downeast Maine Pumpkin Bread
15 oz canned pumpkin
3 eggs
1/4 cup coconut oil, melted
1/4 cup butter, melted
1/2 cup plain yogurt
2 cups sugar
2 3/4 cups white flour
3/4 cups whole wheat flour
2 tsp baking soda
1 1/2 tsp salt
1 tsp cinnamon
1 tsp vanilla
1/4 tsp nutmeg
1/4 tsp cloves
1/4 tsp ginger
1 1/2 TBSP orange zest
1/2 cup chocolate chips (optional)
Divide between 2 greased bread pans (or in two 9x13 pan) and cook at 350 degrees for 45 minutes or until toothpick inserted comes out clean.
