Pumpkin Cookies - two versions

Pumpkin Cookies



1 1/2 cups soft white winter wheat
1 cup quick oats
1/2 tsp baking soda
1/2 tsp baking powder
1 1/4 tsp cinnamon
1/2 tsp nutmeg
2 dashes of cloves
2 dashes of ginger
3/4 tsp salt
1/3 cup sugar (combo of rapadura & evaporated cane juice sugar)
1 3/4 cup pumpkin (1 can)
2 TBSP coconut oil melted
1 TBSP butter melted
1 egg
1 tsp vanilla

Directions
Combine all ingredients, bake 15-20 minutes at 350 degrees.

Pumpkin Carrot Applesauce Cookies 

2 cups whole wheat flour
1 cup oatmeal
1 tsp baking soda
1 tsp baking powder
1 ½ tsp cinnamon
heaping ½ tsp nutmeg
heaping ½ tsp salt
1 cup sugar
1 cup pumpkin
1 cup applesauce
1 cup shredded carrots
¼ cup canola oil
2 eggs
1 ½ tsp vanilla

Bake at 350 for 20-25 minutes

makes 48 cookies
